Gorsha Transforms Traditional Ethiopian Food Into Healthy Build-Your-Own Bowls

Union Market already housed an eclectic array of eateries, but when it debuted Gorsha about six weeks ago, the lineup introduced even more flavor. Gorsha took Ethiopian cuisine and transformed it into a contemporary form of quick-serve, build-your-own fare that customers have quickly embraced.

The lunchtime process begins when you choose a base for your Ethiopian bowl. Turmeric rice, baby kale, and torn pieces of injera bread are among your options. Next, choose a protein. The traditional berbere chicken is seasoned with berbere salt, spices, and olive oil; the braised lamb simmers slowly in turmeric, ginger, and garlic; and the yellowfin tuna marinates in cloves, salt, chili, and cardamom before it’s seared. Then add veggies like red lentils, yellow split peas, or mushroom hash. And finally, load on flavorful toppings that include everything from corn salsa to parsley yogurt sauce.
